  • 2 cups flour
  • 4 eggs
  • ½ cup milk
  • ½ cup water

How to Make the Perfect Vanilla Sponge Cake

Step 1: Heat and Cool the Liquid Ingredients

First, take a small pot and add milk, oil, and water. Heat it up until it just starts to boil. Then turn off the heat and let it cool for a bit. This trick makes the cake extra soft!

Step 2: Prepare the Dry Ingredients

While the liquid is cooling, grab a big bowl and sift the flour. This helps remove lumps and makes the cake lighter. Then mix in the baking powder.

Step 3: Beat the Eggs, Sugar & Vanilla

In another bowl, beat the eggs, sugar, and vanilla extract for about 5 minutes. You want it to look light, fluffy, and pale. My granny always said, “The longer you beat, the better the cake!”

Step 4: Mix Everything Together

Now, slowly add the dry flour mix and the warm (but not hot) milk mixture into the eggs. Do this in about 3 batches, gently folding the batter each time. Be careful not to mix too hard – we want the cake to stay light and airy!

Step 5: Bake to Perfection

Pour the batter evenly into two greased cake pans. Bake at 160°C–180°C (depending on your oven) for about 20–25 minutes. You’ll know it’s ready when a toothpick comes out clean.

Step 6: Let It Cool and Enjoy!

Once baked, let the cakes cool in the pans for a few minutes before moving them to a wire rack. Trust me, waiting is the hardest part! But once it’s cool, you can eat it just like that or add some whipped cream or fruit on top.
